I have just a couple good stir fry recipes that I make during the year, so I'm always on the lookout for new versions. It's difficult to make a good stir fry for a large group since the vegetables must be crisp-tender and served immediately after stir frying since they don't hold well. I have found that I'm able to make a decent stir fry by cooking the vegetables in small batches then heating the sauce, meat and vegetables at the last minute keeps the vegetables bright and crisp-tender.
This meatless version was good but not great. Even though I reserved some of the sauce, it was still way too much for my liking with the vegetables swimming in a too sweet sauce. So on to more testing......
