Snow Day & Split Pea Soup





Snow Day - probably not our last this year.  No matter.   I've decided recently that I need to keep my fridge better stocked and for these cold winter days to have at least a pot of soup ready to go.  Soup or stews always taste better sitting in the fridge for a day or two, so with that in mind I decided to make Ina Garten's Split Pea Soup for the next few subzero nights to come.

This is one of the easiest soups to make, but also flavorful and filling.  The only change I made to the recipe was to add all the peas at once and simmer the soup for about an hour.  Cook it less for a soupy soup or more for a stick to your ribs soup.
