Zucchini & Sweet Potato Fritters

Well it's zucchini time around here and my favorite way to eat them is in fritters.  Fried alone they're pretty plain and don't have much flavor, so I add grated sweet potatoes and feta cheese, along with a healthy dose of cumin.  We're getting our first sweet corn from the field, so that along with the fritters makes a nice supper.




Zucchini & Sweet Potato Fritters

2 c. grated zucchini
2 c. grated raw sweet potato
2 beaten eggs
1/2 c. flour
1/2 t. salt
pepper to taste
1 t. cumin
1/2 c. crumbled feta cheese
2 T. minced fresh parsley
1 T. minced fresh mint, optional

Grate zucchini and allow to drain or squeeze out excess water.  Toss all ingredients together in bowl.  Heat skillet with oil over med high heat.  Mound 1/2 c. portions of mixture in pan and allow to cook for a minute or two.  Flatten with spatula and cook until deep brown.  Turn and cook other side until very brown and crispy.
